Synopsis

Proses penjerapan protein adalah proses yang kompleks kerana terdapat banyak faktor yang mempengaruhi tarikan protein pada sesuatu permukaan seperti kestabilan struktur protein, kekuatan ionik, larutan pH dan permukaan serapan hidrofobik. Kelompokan atau pengumpalan pada lapisan penjerapan adalah kesan daripada ketidakstabilan semasa proses penyimpanan dan penghantaran protein. Langkah untuk meminimumkan pembentukan gumpalan perlu dilakukan. Surfaktan selalunya digunakan bagi mengurangkan gumpalan. Dalam kajian ini akan dilihat bagaimana lisozim yang bertindak sebagai protein dikaji sifat penjerapannya pada permukaan silika dioksida dalam keadaan pH yang neutral. Lisozim adalah protein  yang bercas positif pada pH neutral dan mampu menembusi ke dalam mikrosfera yang bercas negatif. Buku ini memberikan pengetahuan berkaitan kajian melibatkan proses penjerapan protein dan bidang yang berkaitan.
